Make a vibrant hibiscus fermented soda

Ingredients:
- 20g dried hibiscus flowers
- 750ml filtered water
- 60g sugar
- 120ml active ginger bug liquid
Optional:
- Small piece of fresh ginger
- Strip of orange peel
Equipment:
- 1-litre glass bottle or jar
- Fine sieve
- Swing-top bottle or pressure-safe bottle
Directions:
1. Bring the water close to a boil and pour over the hibiscus flowers
2. Add the sugar and stir until dissolved
3. Allow the hibiscus to steep for 10–15 minutes
4. Strain the liquid and allow it to cool fully to room temperature
5. Pour the cooled infusion into a clean jar or bottle
6. Add the active ginger bug liquid and stir gently
7. Cover loosely and leave at room temperature for 24–48 hours
8. Small bubbles and slight cloudiness indicate active fermentation
9. Transfer to a sealed bottle and ferment for another 1–2 days at room temperature
10. Burp carefully if needed
11. Refrigerate once carbonation reaches your preference.
Notes:
The finished drink should be – lightly sparkling – tart and floral – deep ruby-red in colour – gently acidic with subtle complexity.
Keep in mind
- Hibiscus is naturally acidic, which may slightly slow fermentation
- Longer fermentation reduces sweetness
- Refrigeration slows microbial activity significantly
