Quick fermented radishes are colourful, crisp, and lightly peppery. A short fermentation softens their sharpness while keeping their crunch, making them a bright addition to salads, bowls, sandwiches, and grazing plates.

Peppery, vivid, and ready fast

Radishes ferment quickly and bring brilliant colour to a jar. Their peppery edge softens in brine, becoming crisp, tangy, and slightly mellow.

Fermented radishes
Ingredients:
  • 400g radishes, thinly sliced or halved
  • 400ml filtered water
  • 12g fine sea salt
  • 1 garlic clove, lightly crushed
  • ½ tsp mustard seeds
  • ½ tsp black peppercorns
  • 1 small strip lemon peel, optional
Quick fermented radishes
Directions:
  1. Dissolve the salt in the water to make a 3% brine.
  2. Place the garlic, mustard seeds, peppercorns, and lemon peel into a clean jar.
  3. Add the radishes and pour over the brine until fully covered. Use a small weight to keep the radishes submerged.
  4. Cover loosely or use an airlock lid. Ferment at room temperature for 3–5 days.
  5. Taste from day 3. When the radishes are lightly sour and still crisp, refrigerate.
Notes:

Use clean jars and utensils, keep vegetables fully submerged, and taste as the ferment develops. If a ferment smells unpleasant, develops visible mould, or feels slimy in an unusual way, discard it.

For beginner vegetable ferments, a 2–3% salt brine is a practical starting range, depending on the ingredient and method.
