How long do fermented carrot sticks take?
They usually take 5–10 days at room temperature. Warmer kitchens will ferment faster, while cooler rooms may need a little longer. Taste from day 5 and refrigerate when the flavour is tangy and balanced.
Why are my carrots still very crunchy?
That is normal. Carrots stay crisp during fermentation, especially when cut into sticks and kept cold after fermenting. Their crunch is one of the best things about this recipe.
Can I add other spices?
Yes. Coriander seeds, mustard seeds, black peppercorns, chilli, garlic and turmeric all work well with carrot and ginger. Keep the seasoning simple at first so the ginger flavour remains clear.
Ginger carrot sticks in brine
- Prep. Time: 30 mins
- Fermentation: 5–10 days
Ingredients:
Makes 1 medium jar
- 500 g carrots, peeled or well scrubbed
- 15 g fine sea salt
- 500 ml filtered water
- 15–20 g fresh ginger, peeled and thinly sliced
- 1 garlic clove, lightly crushed, optional
- ½ tsp coriander seeds, optional
- ½ tsp mustard seeds, optional
- 1 small chilli, optional
Directions:
- Dissolve the sea salt in the filtered water to make a 3% brine. Stir until the salt has fully dissolved.
- Cut the carrots into sticks that are slightly shorter than the height of your jar, so they can sit upright and remain below the brine.
- Place the ginger slices, garlic, coriander seeds, mustard seeds and chilli, if using, at the bottom of a clean jar.
- Pack the carrot sticks tightly into the jar. The tighter they are packed, the easier it is to keep them submerged.
- Pour over the brine until the carrots are fully covered. Leave at least 2–3 cm of space at the top of the jar.
- Use a fermentation weight to keep the carrots below the brine. Close the jar loosely, or use a fermentation lid.
- Leave at room temperature, away from direct sunlight, for 5–10 days. Open the jar once a day to release gas if using a standard lid.
- Start tasting after day 5. When the carrots are tangy, crisp and pleasantly gingery, transfer the jar to the fridge.
- Keep refrigerated and use clean utensils when serving.
